Watermelon Tomatillo Mint Salad

Delicious and refreshing salad for those hot evenings. Feel free to skip ingredients you don’t have; I consider the tomatillos and watermelon essential. Serves 6

  • 3 cups bite-size watermelon chunks
  • 4 medium husked and sliced tomatillos
  • 1 medium Anaheim chili – Hatch chilis are nice this time of year
  • ½ cup sliced bell pepper, I use orange or yellow for a nice color contrast
  • ¼ cup sliced red onion
  • 2 tbs chopped mint
  • 1 tbs. chopped chives
  • Cilantro and crumbled feta, goat, or blue cheese for garnish
  • Lime vinaigrette (recipe below)

Add all ingredients with the exception of cheese and cilantro and toss lightly with dressing. Plate up, top with garnishes, and enjoy!

Lime Agave Dressing
3 tbs. fresh squeezed lime juice
3 tbs. olive oil
1 tbs. agave or honey
Whisk or shake until well blended
