Delicious and refreshing salad for those hot evenings. Feel free to skip ingredients you don’t have; I consider the tomatillos and watermelon essential. Serves 6
- 3 cups bite-size watermelon chunks
- 4 medium husked and sliced tomatillos
- 1 medium Anaheim chili – Hatch chilis are nice this time of year
- ½ cup sliced bell pepper, I use orange or yellow for a nice color contrast
- ¼ cup sliced red onion
- 2 tbs chopped mint
- 1 tbs. chopped chives
- Cilantro and crumbled feta, goat, or blue cheese for garnish
- Lime vinaigrette (recipe below)
Add all ingredients with the exception of cheese and cilantro and toss lightly with dressing. Plate up, top with garnishes, and enjoy!
Lime Agave Dressing
3 tbs. fresh squeezed lime juice
3 tbs. olive oil
1 tbs. agave or honey
Whisk or shake until well blended
