Juniper, Ginger, and Orange Peel Simple Syrup

This is a warming, delicious sweetener you can use for teas, cocktails, hot chocolate, and on ice cream with berries.

  • 25 juniper berries, dark blue
  • Peel from 1 organic orange, white pith scraped off with a spoon
  • 1 ½ tablespoons fresh grated ginger root
  • 2 cups sugar, I like organic cane sugar
  • 1 cup water

Put all ingredients in a saucepan and heat over moderate heat until sugar is dissolved. Turn the heat down and keep on a low simmer, covered, for an hour. Strain and bottle and keep in the fridge. Lasts for about 2 weeks refrigerated.
