A refreshing spring salad that goes with everything, especially Mexican entrees. Jicama is a root vegetable you can find in the produce section, full of nutrients, fiber, and good for the microbiome. - serves 6-8
Citrus Jicama Salad
- 4 seedless oranges/tangerines or 6-8 clementines, peeled and separated
- 1 ½ cup, peeled jicama, cut into bite-size pieces
- ½ cup chopped red onion
- ¼ cup chopped fresh chopped cilantro
Gently combine ingredients and add enough dressing to lightly coat the ingredients. Serve on baby greens and garnish with cilantro sprigs. You could also top with sliced avocado and add bell pepper and grated carrot.
Cayenne/Lime Dressing
- ¼ c. olive oil
- ¼ c. fresh lime juice
- ½ tsp. ground cumin
- Salt to taste
- ¼ cup plain yogurt
- ½ -1tsp. cayenne pepper
- ½ tsp. ground coriander
- 1 tbsp. honey or agave
Mix well and store extra in the refrigerator
