A refreshing spring salad that goes with everything, especially Mexican entrees. Jicama is a root vegetable you can find in the produce section, full of nutrients, fiber, and good for the microbiome.

Ingredients
Citrus Jicama Salad
4seedless oranges/tangerines or 6-8 clementinespeeled and separated
1 ½cuppeeled jicama, cut into bite-size pieces
½cupchopped red onion
¼cupchopped fresh chopped cilantro
Cayenne/Lime Dressing
1/4cupolive oil
1/4cupfresh lime juice
1/2tspground cumin
Salt to taste
1/4cupplain yogurt
1/2-1tspcayenne pepper
1/2tspground coriander
1tbsphoney or agave
Instructions
Citrus Jicama Salad
Gently combine ingredients and add enough dressing to lightly coat the ingredients. Serve on baby greens and garnish with cilantro sprigs. You could also top with sliced avocado and add bell pepper and grated carrot.
