Spring Salad with Strawberries

Strawberry & Avocado Salad with Sesame Seed Dressing

Strawberries are back in season. When shopping for strawberries look for dry, firm, ripe red berries. Berries do not ripen once picked, so avoid the white ones. Shake the box, the berries should move freely. If they don’t, you may have a rotten one. Check the bottom of the box for fruit stains; try to get one without them. Look for organic berries grown in the US.

  • 2 tablespoons honey or agave nectar or to taste
  • 3 tablespoons mayonnaise
  • 2 tablespoons milk
  • 1 tablespoon sesame seeds
  • 1 tablespoon white wine, herb, or rice vinegar
  • 4-6 cups baby greens
  • 1 cup sliced strawberries
  • 2 small to medium avocados, cut into slices just before serving
  • 2 tablespoons toasted slivered almonds (toast by putting on a tray in your oven at 350 and watch carefully so they don’t burn, usually takes about 3-4 minutes)

Combine the honey, mayonnaise, milk, poppy seeds, and vinegar in a small bowl and whisk well. Place greens in a large bowl. Add enough dressing to coat and toss. Put the greens onto 6 plates and top with strawberries, avocado, and almonds
