Spring Snow Pea and Radish Salad

Serves 2, to serve more just multiply amounts

  • ½ cup thinly sliced radish, about 3-4 medium, using a mandolin makes it easy
  • 1/4 cup julienned peppers, I like mini sweet peppers with a variety of colors
  • 1 cup snow peas, sliced cross-wise after removing hard outer string
  • ¼ cup thinly sliced red onion
  • ½ cup goat or feta cheese (optional)
  • Salt and pepper to taste

Balsamic Dressing

  • 1/2 cup olive oil
  • 1/3 cup good balsamic vinegar
  • Tsp to tbs of Dijon mustard

Put radishes, snow peas, onion, and peppers in a bowl dress lightly with balsamic dressing, salt, and pepper to taste, put on a decorative plate, and top with cheese.

  • ¼ cup thinly sliced red onion
  • ½ cup goat or feta cheese optional
  • Salt and pepper to taste
  • Balsamic Dressing – recipe follows

Instructions

  1. Put radishes, snow peas, onion and peppers in a bowl, dress lightly with balsamic dressing, salt and pepper to taste, put on a decorative plate, and top with cheese.

 

Balsamic Vinaigrette

Ingredients

  • 1/3 cup good balsamic vinegar
  • ½ cup olive or avocado oil
  • 1 tsp Dijon mustard

Instructions

  1. Combine in a small covered glass container and shake well to blend. Always dress your greens before plating, add additional ingredients on top for a visually pleasing appearance and then drizzle with additional dressing if needed.
