Serves 2, to serve more just multiply amounts
- ½ cup thinly sliced radish, about 3-4 medium, using a mandolin makes it easy
- 1/4 cup julienned peppers, I like mini sweet peppers with a variety of colors
- 1 cup snow peas, sliced cross-wise after removing hard outer string
- ¼ cup thinly sliced red onion
- ½ cup goat or feta cheese (optional)
- Salt and pepper to taste
Balsamic Dressing
- 1/2 cup olive oil
- 1/3 cup good balsamic vinegar
- Tsp to tbs of Dijon mustard
Put radishes, snow peas, onion, and peppers in a bowl dress lightly with balsamic dressing, salt, and pepper to taste, put on a decorative plate, and top with cheese.

Balsamic Vinaigrette
Ingredients
- 1/3 cup good balsamic vinegar
- ½ cup olive or avocado oil
- 1 tsp Dijon mustard

Combine in a small covered glass container and shake well to blend. Always dress your greens before plating, add additional ingredients on top for a visually pleasing appearance and then drizzle with additional dressing if needed.
