Rhubarb Shrub Concentrate

Makes approximately 1 cup
Shrubs are coming back to popularity. They were the original pioneer Gatorade. Usually made with equal parts sugar, vinegar, and fruit they are a great summer refresher and a great way to use up slightly overripe fruit. The apple cider vinegar helps to preserve the concentrate for about a month.

  • 1 cup fresh rhubarb, washed and chopped into small pieces, you can also substitute ½ cup of chopped strawberries if you prefer.
  • 2/3 –1cup sugar, preferably organic cane sugar
  • 1 cup raw, organic apple cider vinegar

Mix fruit and sugar in a bowl, stir well, cover, and put in the fridge for 2 days, stirring occasionally. After 48 hours, strain out the solids and add the vinegar to a covered glass jar. Shake well and allow the flavors to meld for a few days. Keep the shrub refrigerated and enjoy diluted with water in your water bottle, with seltzer, or in a mixed drink. A tablespoon or two of shrub to 8 oz of liquid will be quite refreshing.
