Full disclosure, I never really cared for fennel all that much. I do like licorice, just not in my veggies. Found this recipe when I was gifted with 3 bulbs and decided to try it. Simple, easy, and quite delicious!
- 3-4 fennel bulbs, stems removed and cut crosswise into slices
- Olive oil
- Freshly grated parmesan cheese
- Salt and Pepper
- 1 tsp. granulated garlic
- 1 tsp. granulated onion
(you can also use fresh garlic and onion, minced) - 1 tsp. dried or fresh thyme
Oil the bottom of a baking dish. Toss the fennel slices with 2-3 tablespoons of good olive oil and place them in a single layer in the baking dish. Season with the herbs and salt and pepper, generously top with grated parmesan, and roast in a preheated 375-degree oven for about 40 minutes. Enjoy!
