Roasted Fennel with Parmesan and Herbs – from the Food Network, revised by moi. Full disclosure, I never really cared for fennel all that much. I do like licorice, just not in my veggies. Found this recipe when I was gifted with 3 bulbs and decided to try it. Simple, easy, and quite delicious!

Ingredients
3-4fennel bulbsstems removed and cut crosswise into slices
Olive oil
Freshly grated parmesan cheese
Salt and Pepper
1tsp.granulated garlic
1tsp.granulated onion
you can also use fresh garlic and onion, minced
1tsp.dried or fresh thyme
Instructions
Oil the bottom of a baking dish. Toss the fennel slices with 2-3 tablespoons of good olive oil and place them in a single layer in the baking dish. Season with the herbs and salt and pepper, generously top with grated parmesan, and roast in a preheated 375-degree oven for about 40 minutes. Enjoy!
