Chilled Melon Soup with Basil
Easy and elegant, a great starter or palate cleanser. Add a banana and some berries for a nice smoothie. Skip the yogurt and add ice cubes and some vodka or rum, for a refreshing summer cocktail.
- 1 medium honeydew, cantaloupe or other melon, seeded with rind removed
- 3 tbs fresh squeezed lime juice
- 2 tbs Greek yogurt or sour cream
- ¼ cup chopped fresh basil
- Salt and pepper to taste
Place melon, basil and lime juice in blender. Process until smooth. Add salt and pepper to taste. Serve with a dollop of yogurt topped with a fresh basil leaf.
