My Favorite Winter Salad – serves 3-4
Open to whatever other veggies you want to throw in here, but this is my favorite combo.
- 4 cups Arugula or baby greens
- 2/3 cup (or more) pomegranate seeds
- 1 avocado sliced
- 1/3 cup sliced radish
- 1/3 cup thinly sliced red onion
- ½ cup crumbled blue cheese (I like the Dansk blue cheese, get the brick in the cheese section, not the pre-crumbled)
- Balsamic vinaigrette (recipe follows)
Add the salad greens to a bowl and dress with the vinaigrette. Plate the greens and artistically arrange the other veggies on top, finishing with the blue cheese and pomegranate seeds. Bon Appetit!
Balsamic Vinaigrette
- 1/2 cup olive oil
- 1/3 cup good quality balsamic vinegar
- 1 teaspoon Dijon mustard
Combine ingredients in a covered container and shake well. If too tart, add a bit of honey or agave.
