Winter Salad

My Favorite Winter Salad – serves 3-4
Open to whatever other veggies you want to throw in here, but this is my favorite combo.

  • 4 cups Arugula or baby greens
  • 2/3 cup (or more) pomegranate seeds
  • 1 avocado sliced
  • 1/3 cup sliced radish
  • 1/3 cup thinly sliced red onion
  • ½ cup crumbled blue cheese (I like the Dansk blue cheese, get the brick in the cheese section, not the pre-crumbled)
  • Balsamic vinaigrette (recipe follows)

Add the salad greens to a bowl and dress with the vinaigrette. Plate the greens and artistically arrange the other veggies on top, finishing with the blue cheese and pomegranate seeds. Bon Appetit!

Balsamic Vinaigrette

  • 1/2 cup olive oil
  • 1/3 cup good quality balsamic vinegar
  • 1 teaspoon Dijon mustard

Combine ingredients in a covered container and shake well. If too tart, add a bit of honey or agave.
