Slow Roasted Tomato Soup with Goat Cheese and Basil Crème

Take the slow roasted tomatoes from the above recipe and puree in a blender. Season with salt and pepper to taste. Heat on low in a saucepan. If too thick you can add water, chicken broth or tomato juice. Once warm, ladle into bowls and add a dollop of goat cheese and basil cream, (recipe below), top with basil.

 

Goat Cheese and Basil Cream

  • 4 oz goat cheese
  • 6- 8 medium-sized basil leaves, chopped, extra for garnishing.
  • ¼ cup half-and-half or heavy cream

Blend the goat cheese and chopped basil in a food processor; add the cream until the desired consistency is reached. Use with soups, pizzas, sandwiches or cruidites.
