Baby Greens with Mango, Radish, Snow Pea, and a Ginger-Sesame Vinaigrette

  • 2-3 cups mixed baby greens, arugula, or spinach
  • 1 chopped mango, peeled and stone removed- (Not sure how to slice a mango? watch)
  • ½ cup sliced watermelon, black, or regular globe radish
  • 1/2 cup prepared snow peas
  • 1/4 cup sliced red onion
  • Goat or blue cheese (optional)
  • 2 tablespoons toasted sesame seeds
  • Vinaigrette

Toss baby greens lightly with vinaigrette. Plate the greens. Arrange the rest of the ingredients on top and garnish them with sesame seeds.

Vinaigrette

  • 1/2 cup avocado or olive oil
  • 1 1/2 tablespoons toasted sesame oil
  • 1/2 cup rice vinegar
  • 1 tablespoon grated ginger root
  • 1 tablespoon soy sauce
  • dash of agave or honey (optional)

Blend the above in a food processor or glass jar with a lid. Store the extra in the fridge.
