- 2-3 cups mixed baby greens, arugula, or spinach
- 1 chopped mango, peeled and stone removed- (Not sure how to slice a mango? watch)
- ½ cup sliced watermelon, black, or regular globe radish
- 1/2 cup prepared snow peas
- 1/4 cup sliced red onion
- Goat or blue cheese (optional)
- 2 tablespoons toasted sesame seeds
- Vinaigrette
Toss baby greens lightly with vinaigrette. Plate the greens. Arrange the rest of the ingredients on top and garnish them with sesame seeds.
Vinaigrette
- 1/2 cup avocado or olive oil
- 1 1/2 tablespoons toasted sesame oil
- 1/2 cup rice vinegar
- 1 tablespoon grated ginger root
- 1 tablespoon soy sauce
- dash of agave or honey (optional)
Blend the above in a food processor or glass jar with a lid. Store the extra in the fridge.

Baby Greens with Mango, Radish, Snow Pea, and Ginger-Sesame Vinaigrette
