A pretty, tasty salad with lots of flavor and fiber. I sometimes add garbanzo beans and chopped red cabbage for a light lunch. You could also add leftover chicken or seafood for the full meal deal. Great for potlucks or as a side for holiday meals.
- 2 cups shaved Brussel sprouts
- ¼ chopped pepper, I used jalapeno, extra spicy, but Anaheim and bell peppers work well
- ¼ cup pepitas
- ½ cup pomegranate seeds
- ¼ cup chopped red onion
- 1/3 cup shaved parmesan cheese
- 1/3 cup chopped basil or cilantro (optional, but nice if you have it)
- Salt and pepper
Combine ingredients and lightly dress with the lime dressing. Enjoy!
Lime Dressing
- Juice of 1 lime
- Equal amount of olive oil
- 2 tsp. agave or honey
- 1 tsp mustard
Whisk or shake in a covered container to combine.
