Brussel Sprout Pomegranate Salad

A pretty, tasty salad with lots of flavor and fiber. I sometimes add garbanzo beans and chopped red cabbage for a light lunch. You could also add leftover chicken or seafood for the full meal deal. Great for potlucks or as a side for holiday meals.

  • 2 cups shaved Brussel sprouts
  • ¼ chopped pepper, I used jalapeno, extra spicy, but Anaheim and bell peppers work well
  • ¼ cup pepitas
  • ½ cup pomegranate seeds
  • ¼ cup chopped red onion
  • 1/3 cup shaved parmesan cheese
  • 1/3 cup chopped basil or cilantro (optional, but nice if you have it)
  • Salt and pepper

Combine ingredients and lightly dress with the lime dressing. Enjoy!

Lime Dressing

  • Juice of 1 lime
  • Equal amount of olive oil
  • 2 tsp. agave or honey
  • 1 tsp mustard

Whisk or shake in a covered container to combine.
