A pretty, tasty salad with lots of flavor and fiber. I sometimes add garbanzo beans and chopped red cabbage for a light lunch. You could also add leftover chicken or seafood for the full meal deal. Great for potlucks or as a side for holiday meals.

Ingredients
2cupsshaved Brussel sprouts
¼chopped pepperI used jalapeno, extra spicy, but Anaheim and bell peppers work well
¼cuppepitas
½cuppomegranate seeds
¼cupchopped red onion
1/3cupshaved parmesan cheese
1/3cupchopped basil or cilantrooptional, but nice if you have it
Salt and pepper

Instructions
Combine ingredients and lightly dress with the lime dressing. Enjoy!

Lime Dressing Juice of 1 lime Equal amount of olive oil 2 tsp. agave or honey 1 tsp mustard Whisk or shake in a covered container to combine.
