- 1 cup thinly sliced radish
- 2 cups sliced sugar snap peas; stem tip removed
- ½ cup grated carrots
- ½ cup slivered basil leaves
- 1 cup feta or cotija cheese for garnish
- 2 tbs. fresh squeezed lemon or lime juice
- 3 tbs. olive oil
- Dash of honey or agave
- Salt and pepper to taste
Make dressing by combining lemon juice, oil, and sweetener in a jar and shaking/whisking until blended. Add peas, radish, carrots, and basil together in a bowl. Toss lightly with dressing and top with cheese.
