Shrubs are coming back to popularity. They were the original pioneer Gatorade. Usually made with equal parts sugar, vinegar, and fruit they are a great summer refresher and a great way to use up slightly overripe fruit. The apple cider vinegar helps to preserve the concentrate for about a month.

Ingredients
1cupfresh rhubarbwashed and chopped into small pieces, you can also substitute ½ cup of chopped strawberries if you prefer.
2/3–1cup sugarpreferably organic cane sugar
1cupraworganic apple cider vinegar
Instructions
Mix fruit and sugar in a bowl, stir well, cover and put in the fridge for 2 days, stirring occasionally. After 48 hours, strain out the solids and add the vinegar to a covered glass jar. Shake well and allow the flavors to meld for a few days. Keep the shrub refrigerated and enjoy diluted with water in your water bottle, with seltzer, or in a mixed drink. A tablespoon or two of shrub to 8 oz of liquid will be quite refreshing.
