Orange Jicama Salad with Cayenne Lime Dressing
- 4 seedless oranges/tangerines or 8-10 mandarins (cuties), peeled and separated
- 1 ½ cups peeled and julienned jicama, you could substitute thinly sliced fennel root
- 1 small red onion, peeled and sliced very thin
- ¼ cup chopped fresh chopped cilantro
Gently combine ingredients, add enough dressing to coat. Serve on baby greens and garnish with cilantro sprigs.
Cayenne Lime Dressing
- 1/3 cup avocado or olive oil
- ¼ cup fresh lime juice
- ½ teaspoon ground cumin
- ¼ cup plain yogurt
- ½ -1 teaspoon cayenne pepper
- 1 teaspoon. ground coriander
- 1-2 tablespoons honey or agave
- Salt and ground pepper to taste
Mix well and store extra in refrigerator.
