Chimichurri Sauce
- 1 cup fresh Italian parsley
- ½ cup olive oil
- 1/3 cup red wine or balsamic vinegar
- 2 garlic cloves, peeled
- ¾ tsp red pepper flakes
- 1 tsp oregano
- ½ tsp cumin
- ½ tsp salt
Combine in food processor or mortar and pestle. Will keep in the refrigerator for weeks. Bring to room temperature before using.
