Chicken with Sage

  • 8 chicken thighs or 4 chicken breasts
  • Olive or avocado oil
  • 1 tablespoon butter
  • 1-2 apples, I like granny smith,  cored, and cut into wedges
  • 1/3 cup chopped onion
  • 3-4 minced garlic cloves
  • 2/3 cup chicken broth
  • 1 teaspoon cider vinegar
  • 1 tablespoon chopped fresh sage or ½ tablespoon dried
  • Salt and pepper to taste

Season chicken with salt and pepper. Add enough oil to cover the bottom of a skillet. Heat the oil, add chicken, and brown on both sides, turning once. Transfer to a plate or bowl.

Add butter, apples, onions, and garlic to drippings in skillet and cook over moderate heat, stirring occasionally, until apples are lightly browned.

Add broth, vinegar, sage, and chicken to pan. Simmer the chicken until cooked through. Nice with some roasted potatoes and broccoli.
