White Beans with Spinach and Sage

  • 1 can of cannellini or other white beans, rinsed and drained
  • 1 5 oz package fresh organic baby spinach from the produce department
  • Olive oil
  • ¼ cup chopped shallots
  • 4 garlic cloves, minced
  • 1 tablespoon crushed, dried sage
  • 1/2 teaspoon crushed red pepper flakes
  • 1 teaspoon paprika
  • 1 tablespoon finely grated lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon butter

Heat enough oil to cover the bottom of a large pot. Saute shallots over medium heat until tender, add garlic, sage, paprika, and red pepper flakes and stir for another minute or two. Add container of spinach and cook over medium heat, stirring, until wilted. Add beans, lemon zest, and juice. Season to taste with salt and pepper. Serve and enjoy!

Instructions

  1. Heat enough oil to cover the bottom of a large pot.
