Melon and Red Pepper Salsa
- 2 cups watermelon, cut into small cubes
- 2 cups cantaloupe or honeydew, cut into small cubes
- ½ red bell pepper, cored and cut into small cubes
- ½ medium red onion, minced
- 1 jalapeno pepper, cored and finely diced
- ¼ cup finely chopped cilantro (optional)
- Zest and juice from one lime
- Salt and pepper to taste
Mix and serve with chips, or serve as a refreshing side to chicken, pork or fish.
