Fresh Peach Cobbler

Very easy and quick, delicious with some vanilla ice cream.

  • ½ cup butter
  • 1  cup plus 1 tbs flour
  • 1 cup sugar, divided
  • 1 tbs baking powder
  • 1 cup milk
  • 4 cups fresh peach slices (use more if desired)
  • 1 tbs lemon juice
  • Pinch of ground cinnamon and nutmeg

Preheat oven to 375 degrees. Melt butter in a 13 x 9 inch baking dish in pre-heating oven. Combine flour, ½ cup sugar and baking powder, stir to blend. Lightly whisk in milk, stirring just until ingredients are blended. Pour batter evenly over butter, do not stir. Bring remaining ½ cup sugar, peach slices, spices and lemon juice to a boil, stirring constantly. Pour over the batter evenly, do not stir. Bake for 40 to 45 minutes until golden brown. Serve with ice cream. Yum!
