Lions Mane Burger Cakes

Makes 2, you can double or triple the recipe.

  • 2 cups lions mane mushrooms, pulled into bite size pieces
  • 1/3 cup chopped leeks, onion, or shallot
  • 4 minced garlic cloves
  • 1 tsp. Old Bay or Slap Your Mama Cajun seasoning
  • 1 egg, beaten
  • ¼ cup panko or bread crumbs
  • 1 tbs. mayonnaise
  • 1 tsp. Dijon mustard
  • Olive oil
  • Mayo or (my favorite) sriracha mayo, (just mix sriracha with your favorite mayo to taste)
  • Lettuce or salad greens of choice
  • Sliced tomatoes
  • Buns or good rustic bread

Mix 1st 8 ingredients together in a bowl, form into 2 loose patties and refrigerate, covered, for about 30 minutes. Cover the bottom of a sauté pan with olive oil and heat. When hot, but not smoking, carefully place the patties in the pan over medium-low heat. Turn when browned on one side, you may need to add more oil. Cook until browned on both sides. If it falls apart somewhat, don’t worry, you can mound it up on the bun. Serve with the sriracha mayo, sliced tomatoes, and greens. Yum!
