2cupslions mane mushroomspulled into bite size pieces
1/3cupchopped leeksonion, or shallot
4minced garlic cloves
1tsp.Old Bay or Slap Your Mama Cajun seasoning
1eggbeaten
¼cuppanko or bread crumbs
1tbs.mayonnaise
1tsp.Dijon mustard
Olive oil
Mayo ormy favorite sriracha mayo, (just mix sriracha with your favorite mayo to taste)
Lettuce or salad greens of choice
Sliced tomatoes
Buns or good rustic bread
Instructions
Mix 1st 8 ingredients together in a bowl, form into 2 loose patties and refrigerate, covered, for about 30 minutes. Cover the bottom of a sauté pan with olive oil and heat. When hot, but not smoking, carefully place the patties in the pan over medium-low heat. Turn when browned on one side, you may need to add more oil. Cook until browned on both sides. If it falls apart somewhat, don’t worry, you can mound it up on the bun. Serve with the sriracha mayo, sliced tomatoes, and greens. Yum!
