- 3-4 cups arugula or baby greens
- 1 slice melon of choice, seeded and cut into strips
- ½ cup Fava beans, black beans, cannellini beans, or another bean of choice, drained and rinsed
- Pickled onions or thinly sliced red onions
- Small carrot cut into disks
- ½ avocado sliced
- Goat or feta cheese for garnish
- Balsamic vinaigrette – see recipe below
Toss greens lightly with dressing. Divide onto two plates. Arrange the rest of the ingredients in a pleasing manner and drizzle with more dressing.
Balsamic Vinaigrette
- 1/3 cup olive oil
- ¼ cup balsamic vinegar
- Dash of Dijon mustard
Whisk or shake in a covered glass jar until well blended.
