Melon and Avocado Salad

Serving for 2 people.

  • 3-4 cups arugula or baby greens
  • 1 slice melon of choice, seeded and cut into strips
  • ½ cup Fava beans, black beans, cannellini beans, or another bean of choice, drained and rinsed
  • Pickled onions or thinly sliced red onions
  • Small carrot cut into disks
  • ½ avocado sliced
  • Goat or feta cheese for garnish
  • Balsamic vinaigrette – see recipe below

Toss greens lightly with dressing. Divide onto two plates. Arrange the rest of the ingredients in a pleasing manner and drizzle with more dressing.

Balsamic Vinaigrette

  • 1/3 cup olive oil
  • ¼ cup balsamic vinegar
  • Dash of Dijon mustard

Whisk or shake in a covered glass jar until well blended.
