Candied Walnuts
- 1/2 cup sugar
- 1 cup raw walnut halves
- salt, pepper, you can add chili powder, cumin, coriander, cinnamon for more flavor.
Preheat oven to 350°F. Lay walnuts out on a baking sheet in a single layer. Roast for 5-7 minutes. Remove from oven and cool.
Prepare a rimmed baking sheet by lining it with parchment paper. Pour sugar into a medium saucepan with a thick bottom. Have walnuts nearby, ready to quickly add to the pan. Cook sugar on medium heat, stirring as the sugar begins to melt. Keep stirring until all the sugar has melted and the color is medium amber. Add any additional spices. Add the walnuts to the pan, quickly stirring and coating each piece with the sugar mixture.
As soon as the walnuts are coated with the sugar mixture, spread them out on the prepared baking sheet. Use two forks to separate the walnuts from each other, working quickly. Sprinkle the nuts with the salt. Let cool completely. Makes 1 1/2 cups. If you get caramel hardened on your pan, forks and spoon, just reheat with boiling water and it will melt off.
