Baked Apples with Oatmeal Streusel
- 4 large, tart apples
- 3 tbs walnuts
- 3 tbs raisins or other dried fruit, (I like apricots)
- ¾ cup oatmeal
- ¾ cup flour
- 2/3 cup brown sugar packed
- 1 stick cold butter, cut into cubes
- 1 tsp cinnamon
- ½ tsp ginger
- Pinch of salt
Core apples and cut a small well on the top by cutting towards the center, deeper in the middle. Fill the cored part with walnuts and dried fruit, leaving the top part empty. Mix remaining dried ingredients and add the cold butter into the mix. Cut in with a pastry cutter or fork until mixture is crumbly. Place apples in an oiled baking dish. Stuff the streusel into the top of the apple, pressing down to get in as much as possible. If you have leftovers, do another apple or two. Bake in a pre-heated, 350 degree oven for 40 – 50 minutes. When done, the sides of the apples should have some give, check with tongs. Cool somewhat and serve with ice cream or cream.
