Tortellini Sausage Soup with Veggies (sausage optional)
Nice with a glass of wine, a salad, and some crusty bread.

Ingredients
Olive oil
4
cloves
garlic
minced
1/2

thinly sliced onion
1/2
cup
diced bell pepper
I like red

teaspoon
marjoram

teaspoon
thyme
1
teaspoon
chili flakes
optional

andouille or Italian sausage
sliced into disks, (optional)

bunch kale or spinach. If using kale
separate stems and chop, chop kale leaves into bite-size pieces

z can diced tomatoes

ounce
package refrigerated tortellini
6-8
cups
of chicken or vegetable broth
I like the Better Than Bouillon brand, available most everywhere
Salt and pepper
Parmesan cheese for topping.
Instructions
Cover bottom of soup pot with a light layer of olive oil. Going vegetarian? Skip this step. Put sausage in and brown on both sides. Set aside.
In the same pot add onions, kale stems if using, and bell peppers, adding oil if necessary, sauté until tender, add garlic and seasonings and sauté for a minute or two more. Add tomatoes, broth, greens, and tortellini and simmer until tortellini is done and kale is wilted.
Season with salt and pepper if necessary. Add sausage, pour into bowls, top with parmesan, and enjoy!
