Shrubs are coming back into popularity. They were the original pioneer Gatorade. Usually made with equal parts sugar, vinegar, and fruit they are a great summer refresher and a great way to use up slightly overripe fruit. The apple cider vinegar helps to preserve the refrigerated concentrate for about a month.

Ingredients
½cupfresh rhubarbwashed and chopped into small pieces
½cupof chopped strawberries
2/3– 1 cup sugarpreferably organic cane sugar
1cupraworganic apple cider vinegar
Instructions
Mix fruit and sugar in a bowl, stir well, cover, and put in the fridge for 2 days, stirring occasionally. After 48 hours, strain out the solids and add the syrup with the vinegar in a glass jar with a non-metal cover. Shake well and allow the flavors to meld for a few days. Keep the shrub refrigerated and enjoy diluted with water in your water bottle, with seltzer, or in a mixed drink. A tablespoon or two of shrub to 8 oz of liquid will be quite refreshing.
