Delicious and refreshing salad for those hot evenings. Feel free to skip ingredients you don’t have; I consider the tomatillos and watermelon essential.

3cupsbite-size watermelon chunks
4medium husked and sliced tomatillos
1medium Anaheim chili – Hatch chilis are nice this time of year
½cupsliced bell pepperI use orange or yellow for a nice color contrast
¼cupsliced red onion
Cilantro and crumbled fetagoat, or blue cheese for garnish
Lime vinaigretterecipe below
Add all ingredients with the exception of cheese and cilantro and toss lightly with dressing. Plate up, top with garnishes and enjoy!
Lime Agave Dressing 3 tbs. freshly squeezed lime juice 3 tbs. olive oil 1 tbs. agave or honey Whisk or shake until well blended
