Orange Jicama Salad with Cayenne Lime Dressing

Ingredients

seedless oranges/tangerines or 8-10 mandarins
cuties, peeled and separated
1 ½
cups
peeled and julienned jicama
you could substitute thinly sliced fennel root
1
small red onion
peeled and sliced very thin

cup
chopped fresh chopped cilantro
Cayenne Lime Dressing
1/3
cup
avocado or olive oil
¼
cup
fresh lime juice
½
teaspoon
ground cumin
¼
cup
plain yogurt
½ -1
teaspoon
cayenne pepper
1
teaspoon.
ground coriander
1-2
tablespoons
honey or agave
Salt and ground pepper to taste
Instructions
Orange Jicama Salad
Gently combine ingredients, add enough dressing to coat. Serve on baby greens and garnish with cilantro sprigs.
Cayenne Lime Dressing
Mix well and store extra in refrigerator.
