1large garlic head
1/8cupextra virgin olive oil
Preheat oven to 350 degrees. Cut the head of garlic crosswise into 2 halves. Place open halves on a piece of aluminum foil and drizzle with olive oil. Put halves together, twist up the aluminum foil so that it is enclosing the garlic head and roast at 350 for an hour. Removed the garlic from the oven and allow to cool. Squeeze all the garlic out of the skins into a small bowl. If you are going to do more than one head of garlic, put in separate wrappers and place on a roasting tray.
