1 ½cupscooked chickencut into cubes (I like leftover rotisserie chicken)
1cuppitted cherriescut into smaller pieces
¼cupred onionsliced thin
1/2cupthinly sliced celeryabout 1 ½ stalks
1/2cupshredded carrot
Salt and pepper to taste
½ - 1tspred pepper flakesoptional
ButterRomaine, or bibb luce lettuce leaves for wraps
Dressing
½cupmayonnaise
Juice of 1 lime
1/2teaspoongrated ginger rootoptional
Honey or agave
1teaspoonsoy sauce
Instructions
Add all ingredients together and stir in about half of the dressing, more or less to taste. Add spoonfuls to lettuce leaves and have yourself a delicious, healthy, beautiful salad.
Recipe Notes
***You can also use radicchio or endive leaves with a small portion of salad for appetizers.
