- 2 cups arugula
- ¾ cups sundried tomatoes
- ½ cup walnuts. toasted
- ¼ cup olive oil
- 3 tbs fresh grated Parmesan cheese
- 2 cloves fresh garlic
- Salt and pepper to taste
Put all ingredients in a food processor, waiting until you taste it to add salt and pepper. For a thicker version add less oil, for a thinner version, add more. Process into a paste, season, and enjoy. Can be used with crackers, in pizzas, vinaigrettes, on steamed veggies, and pasta.
