Sundried Tomato & Arugula Pesto

  • 2 cups arugula
  • ¾ cups sundried tomatoes
  • ½ cup walnuts. toasted
  • ¼ cup olive oil
  • 3 tbs fresh grated Parmesan cheese
  • 2 cloves fresh garlic
  • Salt and pepper to taste

Put all ingredients in a food processor, waiting until you taste it to add salt and pepper. For a thicker version add less oil, for a thinner version, add more. Process into a paste, season, and enjoy. Can be used with crackers, in pizzas, vinaigrettes, on steamed veggies, and pasta.
