Salad Dressing

Salad Dressing: Balsamic, Ranch, Thai Lime & Blue Cheese

With steamy summer days on the horizon, it’s salad time. Integral to a good salad is a great dressing. Salad dressings are a snap to make yourself, taste better, and don’t have all the nasty stuff found in some of the commercial dressings.

Balsamic Dressing – my old standby
½ cup balsamic vinegar
2/3 cup olive oil
2 tsps. Dijon mustard
Put all ingredients in a covered glass jar, I use mason jars, and give it a good shake.

Ranch Dressing
½ cup plain Greek yogurt
½ cup mayonnaise
Buttermilk, plain kefir, milk or milk replacement to thin
1 teaspoon dried dill
1 teaspoon dried parsley
1/2 teaspoon dried onion granules
1/2 teaspoon dried garlic granules
Salt and pepper to taste.
Add yogurt, mayo, and seasonings to a bowl, whisk until blended. Add enough milk to thin it to dressing consistency. Store in a covered glass container in the fridge.

Thai Lime Dressing
Very tasty with cabbage, carrots, and edamame salads. Nice for dipping with spring rolls.
Juice from 3 limes
2/3 cup olive oil
1 teaspoon fish sauce
2 tbs. honey or agave
1 tablespoon chili flakes (or to taste)
Salt and pepper to taste
You can also add a tablespoon or two of creamy peanut butter, thinned with some hot water. I sometimes add a spoon full of soy sauce.
Whisk all ingredients together and enjoy. Great for dipping spring rolls and veggies.

Blue Cheese Dressing
½ cup Greek, plain yogurt
½ cup mayonnaise
½ cup crumbled blue cheese (I crumble it from a slice of cheese as opposed to buying it pre-crumbled, much better taste)
Milk or substitute to thin
Salt and pepper to taste
You can also add parsley, paprika, thyme, garlic and onion flakes. Whatever suits your fancy. I blend this up in the blender or food processor, you can also mash it up by hand.
*I have also replaced the blue cheese with a light feta for a Greek salad, quite tasty.
