I love pickles and it is so easy to make your own. Yes, you can do the whole canning operation but this is great for a quick condiment and you can do it with anything from cucumbers to jalapenos to cauliflower. I always have pickled jalapenos and red onions on hand for spicing it up.
- 2 cups cut veggie of choice
- 1 cup water
- 1 cup apple cider vinegar
- 1 tsp mustard seed
- 1 or 2 cloves (optional)
- 1 tsp celery seed
- 2 tbs sugar or sweetener of choice
- (or just use 1 tbs. pickling spice)
Combine all of the ingredients, other than the vegetables, in a saucepan and heat until it reaches a simmer and sugar is dissolved Pour the veggies into the pan; turn off the heat and let sit, covered for around 10 minutes. Pack into a clean mason jar, cool and refrigerate. Use within a month.
