Bruschetta

  • 2 cups cored, chopped, fresh tomatoes, place in a strainer for 15 minutes to drain off excess moisture.
  • 2 garlic cloves minced
  • 3 tbs chopped basil
  • 1 tbs chopped parsley
  • 2 tbs olive oil
  • ½ cup cubed baby mozzarella, feta or shaved manchego cheese
  • Salt and pepper to taste.

Combine ingredients and serve over crostini.
