Bruschetta
- 2 cups cored, chopped, fresh tomatoes, place in a strainer for 15 minutes to drain off excess moisture.
- 2 garlic cloves minced
- 3 tbs chopped basil
- 1 tbs chopped parsley
- 2 tbs olive oil
- ½ cup cubed baby mozzarella, feta or shaved manchego cheese
- Salt and pepper to taste.
Combine ingredients and serve over crostini.
