Ingredients

cups
cored
chopped, fresh tomatoes, place in a strainer for 15 minutes to drain off excess moisture.
2
garlic cloves minced
3
tbs
chopped basil
1
tbs
chopped parsley
2
tbs
olive oil
½
cup
cubed baby mozzarella
feta or shaved manchego cheese
Salt and pepper to taste.
Instructions
Combine ingredients and serve over crostini.
