Melon and Red Pepper Salsa

  • 2 cups watermelon, cut into small cubes
  • 2 cups cantaloupe or honeydew, cut into small cubes
  • ½ red bell pepper, cored and cut into small cubes
  • ½ medium red onion, minced
  • 1 jalapeno pepper, cored and finely diced
  • ¼ cup finely chopped cilantro (optional)
  • Zest and juice from one lime
  • Salt and pepper to taste

Mix and serve with chips, or serve as a refreshing side to chicken, pork or fish.
